Tomatoes and pepper salad 

Ingredients :
1 green pepper
2 tomatoes
1 cucumber
1 small onion
salt, black pepper
olive oil
vinegar or lemon juice
few black olives
  How to prepare the salad: 
Wash and peel the vegetables, cut them into small cubes and place all in a bowl.
Sauce: Mix olive oil, vinegar, salt, black pepper. Drizzle the salad with this sauce. Decorate with slices of black olives.

 

Moroccan salad recipe

Ingredients:
4 peppers
3 tomatoes
3 tbsp lemon juice
3 tbsp olive oil
cumin, salt, black pepper
fresh green parsley
  How to prepare Moroccan salad: 
Grill the peppers for some minutes on fire, then close them in a plastic bag. After few minutes peel them and cut into stripes. Steam the tomatoes till you are able to peel them, then cut them in small cubes. Mix the peppers and tomatoes and season the salad with cumin, salt, black pepper, olive oil, lemon juice or vinegar. Spread some chopped parsley on.


Salad with brown rice and vegetables

Ingredients:

1 cup of brown rice
1 cup of peas
Half cup of corn
1 Carrot
1 tbs Oregano
1 tbs Basil
1 tbs Salt
1 tbs Black pepper
2 tbs of olive oil

 

How to prepare it:

Boil the rice in a pan till it’s cooked.
In another pan boil the peas and carrots with half spoon of salt
After the rice is cooked, put it under cold water and wash it
Add the rice in the same pan with peas and carrots (in the pan it has to be about 4 spoons of water)
Add the corn
Add salt, basil, oregano, black pepper and 1 spoon of olive oil
Mix everything and leave it for 10 minutes
Serve it with a little bit of olive oil on.

 

Special occasion salad with vegetables

Ingredients:

2 carrots
one celery
3 apples
a handful of walnuts
homemade mayonnaise
Salt and pepper

 

How to prepare it:

First prepare the mayonnaise from a raw yolk and a cooked yolk, oil, lemon juice.

Wash and peel the carrots and the celery. Let the apples with skin. Cut all in thin sticks. You can also grate everything (using a grater). As you grate the vegetables, add them in mayonnaise to avoid oxidation and changing their color. In the end add walnuts, salt, pepper and mix.

Chop some fresh parsley for garnishing and place it on a large dish. Take a cup that you normally use to serve ice cream, and coat the rim of the cup. Rub around the rim of the cup with something such as a lemon wedge to moisten it. The garnish will adhere to the area that is moistened. Then lay the cup on its side so that the rim is touching the garnish, and rotate or roll the cup on the garnish so that the entire rim is coated. The cup can also just be placed upside down on the rimming ingredient and rotated somewhat to coat the rim.

 

Mixed salad recipe

Ingredients:
4 peppers (green and yellow)
3 tomatoes
1 small onion

1 cucumber
1 beetroot
3 tbsp lemon juice
3 tbsp olive oil
cumin, salt, black pepper
 

How to prepare mixed salad: 
Grill the peppers for some minutes on fire, then close them in a plastic bag. After few minutes peel them and cut into stripes. Steam the tomatoes till you are able to peel them, then cut them in small cubes. Dice the onion. Mix the peppers, tomatoes and onion and season the salad with cumin, salt, black pepper, olive oil, lemon juice or vinegar. Spread some chopped parsley on.

Slice the cucumber, then spread some salt, olive oil and lemon juice. Boil the beetroot and slice it.

Put in the middle of a plate the salad from tomatoes and peppers. Decorate with beetroot and cucumber slices as in the image above or as your imagination tells you.
